Easy Allergy-Friendly Stir Fry

This easy stir fry is quick, flavorful, and perfect for busy nights. Tender ingredients are coated in a savory sauce, which gets even better as leftovers.

Ingredients

  • 1½ lbs of chicken breasts (cut into small chunks) or ground meat
  • olive oil
  • 2 cups broccoli florets
  • 1 red pepper, cut into bite sizes
  • 2 cups chicken broth
  • 4 Tbsp coconut aminos
  • 2 Tbsp cornstarch
  • 4 tsp light brown sugar
  • rice or noodles

Instructions

  1. Stir fry chicken in hot oil in large skillet until brown.
  2. Add broccoli and peppers to skillet. Stir until veggies start to soften.
  3. Mix broth, coconut aminos, cornstarch and sugar in a bowl.
  4. Add mixture to skillet and simmer for 5-10 minutes.
  5. Prepare rice or noodles.
  6. Serve chicken mixture over warm rice or noodles.
