Easy Allergy-Friendly Stir Fry
This easy stir fry is quick, flavorful, and perfect for busy nights. Tender ingredients are coated in a savory sauce, which gets even better as leftovers.

Ingredients
- 1½ lbs of chicken breasts (cut into small chunks) or ground meat
- olive oil
- 2 cups broccoli florets
- 1 red pepper, cut into bite sizes
- 2 cups chicken broth
- 4 Tbsp coconut aminos
- 2 Tbsp cornstarch
- 4 tsp light brown sugar
- rice or noodles
Instructions
- Stir fry chicken in hot oil in large skillet until brown.
- Add broccoli and peppers to skillet. Stir until veggies start to soften.
- Mix broth, coconut aminos, cornstarch and sugar in a bowl.
- Add mixture to skillet and simmer for 5-10 minutes.
- Prepare rice or noodles.
- Serve chicken mixture over warm rice or noodles.
